Loofah, Rag Gourd, Ghosaale, Palo The fruits of the sponge gourd are cylindrical in shape and outer skin is smooth and green in colour. The flavour of this vegetable lies slightly to the bitter side. Sponge gourd contains many seeds which are edible. However, they are removed before the flesh is cooked. Sponge gourd is eaten as a vegetable in curries, chutneys or stir-fries.
